A light hearted spirited dessert
- 2 whole Eggs
- 1 Avocado
- 2 slices Multigrain Bread
- 1/3 cup Potato wedges
- Toast the bread.
- Peel the avocado, chop the pulp and place it on toasted bread.
- Fill half of a microwavable bowl with water.
- Break one egg and microwave for 3mins. for poached egg. Repeat the same process for the 2nd egg.
- Place poached eggs on toast and sprinkle adequate seasoning.
- Serve with a side of potato wedges.
